About Godet
It was way back in 1588 that a Dutch merchant started his salt & wine business in La Rochelle, a harbor town in Western France. His name was Bonaventure Godet and he is counted among the first to start distilling his wine in order to minimize the cost of transportation, receiving the right to do so from Henry IV of France. Hennessy XO x Julien Colombier Cognac
About Hennessy XO x Julien Colombier Cognac
The long and sophisticated process of making this premium cognac stars with the grapes. Hennessy uses the late-maturing variety Ugni blanc, which provides just the right balance between high acidity and low alcohol content for creating well-balanced eaux-de-vie (water of life). It takes approximately 12 kg of grapes to obtain one liter of eau-de-vie. Pressing the grapes produces 9 liters of wine, which is first distilled to make 3 liters of brouillis, and for the second time to make one liter of pure eau-de-vie. These eaux-de-vie are then put in French oak barrels and stored in special, carefully monitored cellars. Every day, the Hennessey tasting committee meets to select or reject eaux-de-vie, and the selected barrels are then sampled annually throughout maturation. This process is steered by Master Blender Renaud Fillioux de Gironde, who became Hennessy’s eighth-generation master blender from the same family after having learned the secrets of the craft from his uncle, Yann Fillioux. The creation of premium cognac does not end at aging. The Master Blender and the Tasting Committee meticulously select the eaux-de-vie for blending, consistently replicating perfection and taste.At the end of 2021, Hennessy partnered with French artist Julien Colombier, releasing 3 limited-edition bottles in celebration of the holiday spirit: a VS, VSOP, and XO. The self-taught artist contributed the design of the bottles, inspired by nature and art deco. Hennessy X.O (X.O stands for extra old) was created in 1870 by Maurice Hennessy for his circle of friends. It was the first cognac to be labeled extra old. About 100 different eaux-de-vie are blended to create this elegant and complex cognac that is presented here with stunning, limited-edition artwork.

About Manoir D'Apreval 1980 Calvados Pays D'Auge
Manoir D’Apreval 1980 Calvados Pays D’Auge was crafted in 1980 from a unique blend of organically grown apples. Lettelier chose a selection of bitter and bitter-sweet apple varieties, which were rich in tannins and acidity and ultimately provided the calvados with its smooth flavor and full body. Once the apples were harvested and pressed into a tart juice, the fresh cider was rested for ten months in a fermentation tank in order completely transform the sugars into alochol. Next, the cider was twice distilled through a pot still in the traditional Pays d’Auge method and then immediately transferred into oak barrels for maturation.Manoir D’Apreval 1980 Calvados Pays D’Auge was matured in 1,200 liter oak barrels for 25 years, before being transferred into 400 liter barrels in 2005. After maturing for over 33 years, the calvados was brought to proof and bottled. It has a dark mahogany color, along with an aroma of bitter oranges, cocoa and ginger bread. Notes of dark chocolate, orange, citrus and caramel dominate the palate, and lead to a finish accented by tobacco leaves and coffee beans.

Since the reign of Charlemagne in the 8th century, distilleries in the Lower Normandy region of France have been distilling calvados — a type of apple brandy. Calvados is made by harvesting and pressing fresh apples into a pulpy juice. The juice is then fermented into a dry cider, which is distilled before being matured in oak casks for a minimum of two years.Calvados has a long and rich history in France. When an outbreak of phylloxera devastated the vineyards of France, calvados experienced a golden age. In addition, during World War I, calvados was requisitioned by the French Army both as a drink for French soldiers to enjoy and, because of its alcohol content, for use in armaments.
Manoir d’Apreval is a family-owned calvados distillery situated in the French commune of Honfleur, which sits in Normandy’s "Pays d’Auge" region, made famous for its production of apples and Camembert cheese. Established at the beginning of the 20th century by Victor Revillon, Manoir d’Apreval has since been stewarded by three generations of Revillon women — Victor’s wife, his granddaughter, and now his great granddaughter, Agathe Lettelier.
